Deliciously Healthy Vegan Morning Glory Muffins Recipe

This is a great nutrient dense recipe. We love it for kids snacks, or a quick hearty breakfast. The beautiful thing about recipes like this is they are versatile and easy to substitute ingredients.


We are a no egg no dairy household for baked goods, and have tried many different versions of vegan recipes. After many failed attempts this is a recipe that we have repeated over and over in different versions.


Many ingredients can be substituted to alter the recipe to fit your dietary needs.






  1. Swap out the flour 1:1 for any other type (except gluten free). This recipe has not been tested with gluten free grains. Please leave a comment if you do convert this recipe into a gluten free muffin.

  2. Replace the oil with apple sauce, pear sauce and even banana if you are looking to go oil free.

  3. Replace the oil with melted butter.

  4. Add 1 egg to provide more structure to the muffin mix.

  5. Sub out oat milk for another type of milk (dairy or non dairy).


Play around, and have fun. Enjoy this protein rich and high fibre muffin on the go or with your coffee in the morning.


Recipe

Yield 16 muffins

 

2 Cups Einkorn Flour (or any flour you choose)

1 tsp Baking Soda

2 tsp Baking Powder

2 tsp Ground  Cinnamon

½ tsp Nutmeg

¼ tsp salt

¾ cup Olive Oil

1 cup Oat Milk

2 tbsp Apple Cider Vinegar

1 tsp Vanilla

2 Carrots – peeled & grated

2 Apples – peeled & grated

1 cup Dried Cranberries

½ cup Hemp Seeds

½ cup Brown Sugar

 

Instructions

  • Preheat oven to 375 F

  • Prepare muffin pans with liners and coat with a thin layer of oil.

  • Combine the olive oil, milk, vanilla and apple cider vinegar together.

  • Combine grated carrots, apples, cranberries, hemp seeds, and brown sugar with wet ingredients.

  • In a separate bowl, mix all dry ingredients together. Flour, baking soda, baking powder, salt, cinnamon and nutmeg.

  • Combine all ingredients together. Mix until just combined. Careful to not overmix. Overmixing will result in a tough texture.

  • Bake for 25 minutes

  • Perform the toothpick test to confirm if muffins are finished baking
